The Arte Bianca line offers versatile cooking options including convection, combi, and steam cooking with a temperature range from 30°C to 280°C. It features manual cooking modes with fast steam technology for immediate steam generation and humidity control from 0% to 100%. The system includes a manual forced extraction of humidity and automatic inversion of fan rotation. The cooking chamber is made of 304 stainless steel, and the design includes ergonomic handles compliant with HACCP standards, a screwless frontal structure, and a simply-removable control panel.
The ovens are available in models with capacities of 6 or 10 trays (600x400 mm), with dimensions of 850x890x890 mm or 850x890x1170 mm, respectively. They weigh between 90 kg and 125 kg and operate at a power of 11 kW or 17 kW with a voltage of 380-415 V / 3 N. The IP protection level is IPx 4.
The Arte Bianca line supports manual and programmed cooking modes, with data storage for up to 99 programs. It includes features like pre-heating modes, multi-function digital displays, and the ability to modify cooking parameters during operation. Special cycles such as Delta T, Time’s Up, and Cook&Go are available for synchronized and simultaneous cooking.
The ovens feature manual humidity supply and fast steam technology. Humidity extraction can be manually controlled or automated with programmable systems.
The ovens are constructed with a 304 stainless steel cooking chamber and control panel structure. They include features like a reversible door opening, double glass doors with high thermal insulation, and halogen inner lamps for visibility.
Safety features include a cooling fan for component protection and a safety fan stop when the door is open. The washing system includes a manual external shower and an optional automatic washing system with YesClean technology.
A range of accessories is available, including external shower kits, detergent and limescale products, cartridge filters, and various tray and rack options. Optional features include reversible door openings and stackable kits.
