Overview
SCH rack blast freezers are designed for rapid cooling and freezing of products before conservation. They are available in standard or tunnel versions and can accommodate 1 to 4 racks of sizes 400x600 mm or 600x800 mm. The freezers perform three main functions: fast positive cooling, fast negative cooling, and blast freezing cycle.
Construction and Design
The unit is constructed with 80 mm thick insulating polyurethane foam panels with a density of 45kg/m3. The outer surface is cladded with AC galvanized sheets and resistant PVC, while the inner surface features a 304 stainless steel liner. The floor is insulated with a 15 mm PVC layer covered by a stainless steel liner. The door is equipped with a 50 Newton hydraulic closer and a robust stainless steel handle for airtight closure.
Interior Features
The interior includes a 2 mm thick stainless steel protection layer to guard against rack shocks and a simplified attachment system for quick assembly. Standard automatic LED lighting is provided.
Regulation SystemThe electromechanical control system manages three cycles: quick positive cooling, quick negative cooling, and blast freezing. These cycles can be timed and controlled by temperature or insertion sensors. The
freezer automatically switches to conservation mode at the end of each cycle. Overdimensioned fans ensure powerful and regular airflow.
Performance Specifications
The performance varies across models (SCH 46x1 to SCH 68x4) with refrigerating power ranging from 3.1 kW to 16.4 kW at -30°C. Freezing capabilities include baking products from +20°C to -18°C in 1 hour per kg, delicatessen products from +3°C to -18°C at core in 2 hours, and fast cooling of pastry cream from +65°C to +10°C at core in 110 minutes. The units operate on a voltage of 400-440 V / 50 Hz with connecting electrical power ranging from 8 kW to 20 kW.
