Forced Hot Air Cooking
  • Specifications: Examples include 2-module units with 72 kW power and 1-module units with 54 kW power plus steam injection. A 3-module unit example has a total power of approximately 160 kW with steam injection.
  • Operating Principle: The cooking air is moved by a ventilation unit located at the front and upper end of the module. The air is pulsed, channeled, and heated by electrical resistances before entering the cooking zone. It is primarily directed towards the top of the conveyor, with a lower flow directed underneath using nozzles. The air travels the length of the module, is sucked in by the ventilation unit, and pulsed again.
Continuous Production Conveyor Cooking
  • Applications: Suitable for products requiring cooking in water or oil baths, saturated air, or pulsed air.
  • General Construction: Features a stainless steel or polypropylene link conveyor managed by a variable frequency controller. Temperature is regulated by a program controller for simplified operation. The design allows easy access for cleaning and maintenance.
  • Energy Sources: Can operate using gas, steam, or electricity.
