Buying the Combi Banquet System - What do I need? For each system the maximum number of recommended plate cassettes is three. You have two choices for distance between each plate, 2.56" (65mm) or 3.35" (85 mm). Vertical spacing on 202 models are 2.64" (67mm) or 3.35" (85 mm). Blodgett's fat separation system is ideal for use in the preparation of very fatty product such as chicken and spare ribs. Tubes direct the fat into a separate container under the oven so it does not clog the drain. The container can easily be rolled out and emptied.
