Food & Drink: Salumificio San Carlo, Ziano Piacentinoo Isolated loading bays Minimising contact with the outside environment is one of the main requirements for a food company The Piacentino hills start about 100 km south of Milan. Wine and cold meats are the main products typically found in an area tradi- tionally rich in small and medium-sized food companies. Salumificio San Carlo is one of the largest producers of Italian salami and high- quality bacon, distributing through traditional mass retail channels and using its own brand and other vendors to supply its products. In 2011, the plant doubled its capacity to meet growing demands. The layout of its goods loading area was one of the main issues that remained unresolved. The temperature inside it has to be kept at around 6-8°, which for most of the year is much lower than the temperature of the external environment. The internal environment is also subject to frequent washing and, for hygiene reasons, has a significant concentration of salt in the Critical aspects • Minimising contact with the external environment for hygiene purposes; • Avoiding sudden temperature changes through logistics management • Avoiding unnecessary waste to maximise energy savings; • Using products that are durable despite the unique nature of the work environment. • Crawford Isodock, isolated loading ramp, fully galvanised; • Interlocked traffic-light system with sensor to alert the presence of lorries; • Insulated, sectional and motorised Crawford 542 doors, complete with anti-corrosion kits. The lorry alert sensor opens and permits use of loading bays only when vehicles are present. In this way, a single environment is always created between the warehouse and the inside of the lorry. The fully isolated ramp also pre- vents any thermal bridge during operation and rest phases. Many product parts and accessories are hot-dip galvanised and powder- coated in stainless steel to ensure that despite the aggressive environment, frequently hygiene treatments and intense washing, they work perfectly for many years.
